Breeds
Pigs – the Gloucester Old Spot is a great British breed. It originates from the Severn Valley, where it was often run amongst apple orchards. Legend has it that it got its name because local people believed the spots were bruises caused by falling apples!
Cattle – we run two breeds of cow – Herefords and Aberdeen Angus Both are traditional British breeds – the Hereford can be traced back to the 17th century, descending from the red cattle of the Welsh marches.
The Aberdeen Angus comes from a selective breeding programme started by farmers in north-east Scotland in the early 19th century.
You really can’t get much more traditional than this. Both breeds are happy in our climate and grow slowly, laying down marbled fat throughout the flesh. This is part of what gives the superb flavour.
Rearing – our cows are grass fed for as much of the year as we can manage. They’re only brought in during the deep winter months. There is a lot of evidence that grass feeding leads to meat that has higher nutrient content, particularly as regards the Omega 3 content.
Slaughter – a few years ago we wouldn’t be telling you about this – but thankfully people are now more realistic about where their food comes from. We think you ought to know how the animals we raise are killed, and that it is a humane process.
